Watch an enthralling Caribbean cooking demonstration at the historical Fairview Great House while a local chef entertains you with tales about the history of the island’s regional dishes. Once the residence of a French military commander, the restored house has a storied 300-year-old history and offers an inspired setting for this culinary experience. The chef will demonstrate how to prepare several of the most popular regional dishes, such as jerk pork loin, creole fish in a tomato broth, green banana escovitch and coconut bread pudding. Learn how the Ke'kchi hand-craft chocolate the traditional way from pod to bar at the Akte'il Ha Cacao Farm. Enjoy a tour of the organic chocolate farm and experience the chocolate-making process from start to finish. Observe the hand grinding of the cacao beans and taste the chocolate in its various forms.
